Thistle Flower Jelly



Stop swearing about your thistles and praise them instead.


Their flowers make a beautiful jelly. When you notice the number of bees and butterflies around their flowers it gives you an idea of the sweet nectar inside these pretty purple/pink flowers.


In this recipe I used Canada Thistle:


  • Pick 4 cups of the flowers.

  • Add liquid (approx. 3.5 cups) and cook until the flavour and colour has gone into the water. Keep the water and discard the flowers.

  • Use 3 cups of flower infused liquid.

  • Add to stove, heat and stir in one package of fruit pectin.

  • I like to add one tablespoon of lemon juice at this point.

  • Bring to a boil.

  • Add 4 cups of white sugar.

  • Stir frequently and let boil for 1 min.

  • Remove from heat and skim foam.

  • Can

My kids absolutely adore this jelly. It is light and sweet and looks so pretty.
